Another ex MU VSO who was my colleague came across your blog and sent me the link. I'm now back in Ethiopia, working in Addis. I know some current VSOs so I guess I might run into you sometime. I attended a meeting of an ICT SIG recently, which comprised people from various universities who are involved in the ADRCs - one was Samrawit who works in the Arid Campus of MU, in IT. She's trying to set Moodle up there - seems there's a lack of communication in the university as she wasn't aware that it's already being used for this project. I can give you more contacts & info if you drop me an email...I believe St. Marys college here in Addis are using Moodle also for distance learning and I know a guy who's helping get it up and running in Kotebe Civil Service College.
